👩‍🍳 Method

🥣 1. Boil the Pasta

1. In a large pot, boil water with salt and oil.

2. Add pasta and cook until al dente (soft but with a bite).

3. Drain and rinse under cold water.

4. Toss with a few drops of oil to prevent sticking.
→ Keep aside.

---

🍳 2. Sauté the Vegetables

1. Heat butter or olive oil in a pan.

2. Add chopped garlic and sauté till fragrant (do not brown).

3. Add onions, capsicum, carrots, and corn.

4. Sauté for 2–3 minutes on medium flame — they should stay slightly crisp.
→ Keep them aside.

---

🥛 3. Prepare the White Sauce (Bechamel)

1. In the same pan, melt 2 tbsp butter.

2. Add 2 tbsp maida and stir continuously on low flame for 1 minute — don’t let it brown.

3. Gradually add warm milk, stirring constantly with a whisk to avoid lumps.

4. Cook till the sauce thickens and coats the back of a spoon.

5. Add salt, pepper, oregano, and chilli flakes.

6. Mix in the grated cheese and stir till smooth and creamy.

---

🍝 4. Combine

1. Add the sautéed veggies and boiled pasta to the sauce.

2. Toss gently till the pasta is well coated.

3. If sauce becomes too thick, add 2–3 tbsp warm milk.

4. Adjust seasoning and creaminess as per taste.

---

🧀 5. Serve

Serve hot, garnished with:

Extra grated cheese 🧀

A sprinkle of chilli flakes & oregano 🌿

---

💡 Tips

For a richer version, add 2 tbsp fresh cream at the end.

Always use warm milk while making sauce to prevent lumps.

Use whole wheat pasta or add broccoli, mushrooms, or zucchini for a healthier twist.

If you want it baked, sprinkle cheese on top and bake at 180°C for 10 minutes until golden.
