Mexican Rice

🌶 Mexican Rice

Ingredients
 • 1 cup rice
 • 1 tbsp oil
 • 1 tbsp tomato paste
 • 2 cups chicken broth
 • ¼ tsp ground cumin
 • ¼ tsp onion powder

Instructions
 1. Heat oil in a saucepan over medium heat.
 2. Add rice and sauté until lightly golden.
 3. Stir in tomato paste, cumin, and onion powder.
 4. Pour in chicken broth, bring to a boil, then reduce heat.
 5. Cover and simmer for 15–20 minutes until rice is tender.
 6. Fluff with a fork and serve warm.

🧄 Garlic Butter Rice

Ingredients
 • 1 cup rice
 • 1 tbsp butter
 • 1 tbsp minced garlic
 • 1½ cups chicken broth
 • Salt and pepper to taste

Instructions
 1. Melt butter in a pot over medium heat.
 2. Add garlic and cook until fragrant (about 30 seconds).
 3. Stir in rice and toast lightly.
 4. Pour in chicken broth, season with salt and pepper.
 5. Cover and cook for 15 minutes until rice is soft.
 6. Fluff and serve with extra butter on top.

🌿 Herb Rice

Ingredients
 • 1 cup rice
 • 1 tbsp butter
 • 1¼ cups chicken stock
 • 1 tsp Italian seasoning
 • Salt and pepper to taste

Instructions
 1. In a saucepan, melt butter and add rice.
 2. Sauté for 1–2 minutes.
 3. Add stock, seasoning, salt, and pepper.
 4. Bring to a boil, then cover and simmer for 15 minutes.
 5. Fluff with a fork and garnish with fresh herbs.

🍳 Fried Rice

Ingredients
 • 1 cup cooked rice (preferably day-old)
 • 1 tbsp oil
 • 2 tbsp soy sauce
 • 2 eggs, beaten
 • 2 cups mixed vegetables

Instructions
 1. Heat oil in a wok or large pan.
 2. Add eggs and scramble; push to one side.
 3. Stir-fry vegetables for 2–3 minutes.
 4. Add rice and soy sauce, mixing everything together.
 5. Cook until hot and slightly crisp. Serve immediately.
