🧂 Ingredients
500g fish (mackerel, pomfret, or kingfish)
50g red chili paste (Kashmiri chili preferred for color)
2 tbsp ginger-garlic paste
2 tsp cumin powder
1 tsp turmeric powder
3 tbsp tamarind pulp
2 tbsp vinegar
Few curry leaves
Salt to taste
Oil for shallow frying
(Optional: 1 tbsp rice flour or semolina for extra crispiness)

👨🍳 Instructions
1. Clean & Prep Fish:
Wash the fish thoroughly. Make diagonal slits on both sides for even marination.
2. Make the Marinade:
In a bowl, mix red chili paste, ginger-garlic paste, cumin powder, turmeric, tamarind pulp, vinegar, and salt.
Adjust spice level and tanginess to taste.
3. Marinate the Fish:
Rub the marinade generously into the slits and coat all over.
Rest for at least 30 minutes (or refrigerate for up to 2 hours for deeper flavor).
4. Coat for Crispiness (Optional):
Just before frying, lightly dust each piece with rice flour or semolina (rava) for a golden crust.
5. Fry the Fish:
Heat oil in a flat pan over medium flame.
Add curry leaves for aroma.
Shallow fry the fish on both sides until crisp and reddish-brown — about 4–5 minutes per side.
6. Serve Hot:
Garnish with lemon wedges and fresh curry leaves.
Pair with Goan rice, salad, or pav (bread rolls).
