Vanilla Cupcakes

1. Vanilla Cupcakes

Ingredients
 • 130g (1 cup) all-purpose flour
 • 1/4 tsp salt
 • 1 tsp baking powder
 • 120g (1/2 cup) unsalted butter
 • 150g (3/4 cup) sugar
 • 2 eggs
 • 2 tsp vanilla extract
 • 60ml (1/4 cup) milk

Method
 1. Preheat oven to 175°C (350°F).
 2. Cream butter and sugar until light and fluffy.
 3. Add eggs one at a time, then mix in vanilla extract.
 4. In a bowl, whisk flour, salt, and baking powder.
 5. Add dry ingredients alternately with milk into the butter mixture.
 6. Divide batter into cupcake liners.
 7. Bake for 18–20 minutes, until a toothpick comes out clean.

2. Chocolate Cupcakes

Ingredients
 • 100g (3/4 cup) all-purpose flour
 • 1/4 tsp salt
 • 40g (1/3 cup) cocoa powder
 • 1/2 tsp baking soda
 • 115g (1/2 cup) unsalted butter
 • 150g (3/4 cup) sugar
 • 2 eggs
 • 120ml (1/2 cup) buttermilk
 • 1 tsp vanilla extract

Method
 1. Preheat oven to 175°C (350°F).
 2. Cream butter and sugar together until smooth.
 3. Add eggs and vanilla extract, mix well.
 4. In a bowl, whisk flour, cocoa, salt, and baking soda.
 5. Add dry mixture to butter mixture alternately with buttermilk.
 6. Pour into cupcake liners.
 7. Bake for 18–22 minutes.

3. Lemon Cupcakes

Ingredients

 4. Whisk flour, salt, and baking powder in a bowl.

 7. Bake 18–20 minutes until golden.

4. Red Velvet Cupcakes

Ingredients
 • 125g (1 cup) all-purpose flour
 • 1/4 tsp salt
 • 1 tbsp cocoa powder
 • 115g (1/2 cup) unsalted butter
 • 150g (3/4 cup) sugar
 • 1 egg
 • 1 tbsp red food coloring
 • 120ml (1/2 cup) buttermilk
 • 1 tsp vanilla extract

Method
 1. Preheat oven to 175°C (350°F).
 2. Cream butter and sugar until light.
 3. Beat in egg and vanilla.
 4. Mix flour, salt, and cocoa powder.
 5. Add dry mixture alternately with buttermilk and food coloring.
 6. Pour batter into liners.
 7. Bake 18–22 minutes until set.
