Pancakes

Soft, sweet, and golden — three ways to start your day right.

1. Yogurt Pancakes

Ingredients
1 cup all-purpose flour
2 tbsp sugar
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
1 cup plain yogurt (Greek yogurt works too)
1 large egg
2 tbsp melted butter or oil
1 tsp vanilla extract
2–3 tbsp milk (only if batter is too thick)

Instructions:
Mix dry ingredients – In a bowl, whisk flour, sugar, baking powder, baking soda, and salt.
Mix wet ingredients – In another bowl, whisk yogurt, egg, melted butter, and vanilla until smooth.
Combine – Gently stir wet mixture into dry. If too thick, add a splash of milk. Batter should be thick but pourable.
Cook – Heat a lightly greased pan over medium heat. Pour about ¼ cup batter for each pancake. Cook until bubbles form on top, flip, and cook until golden brown.
Serve – Stack and enjoy with honey, maple syrup, fruit, or even a spoon of extra yogurt on top.

2. French Toast Sticks

Ingredients 
4 thick slices of bread (Texas toast or brioche works best)
2 large eggs
½ cup milk (or cream for richer flavor)
1 tbsp sugar
1 tsp cinnamon
1 tsp vanilla extract
Pinch of salt
Butter or oil for frying

Instructions:
Prepare bread – Cut each slice of bread into 3 or 4 thick sticks.
Make custard – In a shallow bowl, whisk eggs, milk, sugar, cinnamon, vanilla, and salt.
Dip – Quickly dip each bread stick into the mixture (don’t soak too long or they’ll fall apart).
Cook – Heat butter/oil in a skillet over medium heat. Fry sticks until golden brown on all sides, about 2–3 minutes per side.
Serve – Sprinkle with powdered sugar and serve with maple syrup, chocolate sauce, or fruit for dipping.

3. Classic Crepes 

Ingredients:
1 cup all-purpose flour
2 large eggs
1 ¼ cups milk
2 tbsp melted butter (plus more for the pan)
1 tbsp sugar (optional, for sweet crêpes)
1 tsp vanilla extract (optional)
Pinch of salt

Instructions:
Make the batter – In a bowl, whisk flour, eggs, milk, melted butter, sugar, vanilla, and salt until smooth. (Or blend for extra smooth batter.) Let rest for 20–30 minutes if possible.
Heat the pan – Lightly butter a non-stick skillet and heat over medium.
Cook crêpes – Pour about ¼ cup batter into the pan, swirl quickly to coat the bottom. Cook 1–2 minutes until edges lift, flip, and cook another 30–60 seconds.
Serve – Fill with Nutella, fruits, jam, or savory fillings like ham & cheese. Roll or fold and enjoy!
