- 3 tbsp coriander seeds
- 2 tbsp cumin seeds
- 2 tbsp fennel seeds
- 1 tbsp black peppercorns
- 6–8 dried red chilies
- 6–8 green cardamoms
- 2 black cardamoms
- 1-inch cinnamon stick
- 6–8 cloves
- 2 bay leaves
- 1 mace blade
- 1 nutmeg (small piece)
- 1 tbsp dry ginger powder
- 1 tbsp turmeric powder
- 1 tbsp salt
Preparation
1. Dry roast all whole spices (coriander, cumin, fennel, peppercorns, chilies, cardamoms, cinnamon, cloves, bay leaves, mace, nutmeg) on low flame until aromatic.
2. Let them cool completely.
3. Grind into a fine powder.
4. Mix in dry ginger powder, turmeric powder, and salt.
5. Store in an airtight glass jar.
