1. Spicy Peanut Noodles
Ingredients:
For the sauce:
1/4 cup creamy peanut butter
2 tbsp soy sauce
1 tbsp rice vinegar or lime juice
1 tbsp chili garlic sauce or Sriracha (adjust to heat level)
1 tbsp honey or maple syrup
1 tsp sesame oil
1–2 tbsp hot water (to thin)
For the noodles:
8 oz noodles (spaghetti, ramen, rice noodles, soba or Knife-cut noodles)
1–2 cloves garlic, minced
Optional: shredded carrots, sliced cucumber, chopped peanuts, green onions, cilantro
Instructions:
1. Cook noodles according to package directions. Drain and rinse if serving cold.
2. Whisk sauce ingredients in a bowl until smooth and pourable. Add more hot water if too thick.
3. Toss noodles with sauce until well coated.
4. Top & serve: Add fresh toppings like peanuts, scallions, or veggies. Serve warm or chilled.
2. Garlic Chili Oil Noodles
Ingredients
8 oz wheat noodles (lo mein, ramen, or spaghetti) I used Taiwanese knife cut noodles
3 tbsp chili oil (homemade or store-bought, with chili flakes)
4 cloves garlic, finely minced
1 tbsp soy sauce
1 tbsp dark soy sauce
1 tsp rice vinegar (or black vinegar)
1 tsp sugar
2 green onions, sliced
Sesame seeds for garnish
Cucumber julienne for garnish
Instructions
Cook noodles: Boil noodles according to package directions. Drain and set aside.
Prepare sauce base: In a heatproof bowl, combine garlic, chili oil, soy sauce, vinegar, and sugar.
Infuse flavor: Heat 2 tbsp neutral oil until shimmering hot. Carefully pour the hot oil over the garlic-chili mixture (it will sizzle and release fragrance).
Toss noodles: Add cooked noodles into the bowl. Toss well until evenly coated.
Garnish & serve: Top with green onions, sesame seeds, and cucumber if desired. Serve hot and slurp away!
3. Cold Sesame Noodles
Ingredients
For the noodles:
8 oz noodles (spaghetti, soba, or Chinese wheat noodles)
1 cucumber, julienned
1 carrot, julienned
2 green onions, sliced
Sesame seeds (for garnish)
Crushed peanuts ( for garnish)
For the sesame sauce:
3 tbsp sesame paste (tahini or sesame paste)
2 tbsp peanut butter (optional, for creaminess)
2 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp sesame oil
1 tbsp honey or sugar
1 clove garlic, grated
1 tsp ginger, grated
2–3 tbsp water (to thin sauce)
1 tbsp chili oil (optional)
Instructions
Cook noodles according to package directions. Drain, rinse under cold water, and toss with a little sesame oil to prevent sticking.
Make the sauce: In a bowl, whisk together sesame paste, peanut butter, soy sauce, rice vinegar, sesame oil, honey, garlic, ginger, and chili oil. Add water little by little until smooth and pourable.
Assemble: Toss the cold noodles with the sauce until well coated.
Top with veggies: Add cucumber, carrot, and green onions. Sprinkle with sesame seed and crushed peanuts.
Serve chilled or at room temperature.
