✅ Ingredients (by weight – preferred for accuracy)
| Amchur (dry mango) powder | 25 g ~2.5 tbsp
| Black salt (kala namak) | 20 g ~2 tbsp
| Salt (normal) | 10 g ~1 tbsp
| Cumin seeds (roasted) | 10 g ~1 tbsp
| Coriander seeds (roasted) | 8 g ~1 tbsp
| Black peppercorns | 6 g ~1 tsp
| Dry ginger powder (saunth) | 5 g ~1 tsp
| Asafoetida (hing, strong compound) | 1/4 tsp ~0.25 tsp
| Mint powder (optional but preferred) | 2 g ~1 tsp
| Clove powder (laung) | 1 g ~2 pinches
| Nutmeg powder (jaiphal) | 1 pinch
| Citric acid (food grade) | 1 g ~1/4 tsp
| Sugar powder (optional) | 3 g ~1 tsp
🔥 Roasting Process:
1. Dry roast *cumin seeds and coriander seeds* in a pan on low flame until aromatic (30–45 sec). Cool completely.
2. Grind them to a fine powder using a spice grinder.
🥣 Final Mixing:
1. Combine all the *powders* (including roasted powders) in a bowl.
2. Mix thoroughly and sieve once to ensure uniformity.
3. Store in an *airtight glass jar* away from sunlight.
