Homemade Chole Masala Recipe :-
Ingredients:
Coriander seeds – 3 tbsp
Cumin seeds – 1 tbsp
Dry red chilies – 4 to 5 (adjust to taste)
Black peppercorns – 1 tsp
Cinnamon stick – 1-inch piece
Cloves – 4 to 5
Green cardamom – 4 pods
Black cardamom – 1 pod
Bay leaf – 1
Fennel seeds (saunf) – 1 tsp
Carom seeds (ajwain) – ½ tsp
Dry ginger powder (saunth) – 1 tsp (or small piece of dry ginger)
Amchur powder (dry mango powder) – 1½ tsp
Pomegranate seeds (anardana) – 1 tbsp
Nutmeg (jaiphal) – a pinch, grated
Asafoetida (hing) – ¼ tsp
Turmeric powder – ½ tsp

Instructions:
Dry roast the whole spices (coriander, cumin, red chilies, black pepper, cinnamon, cloves, cardamoms, bay leaf, fennel, ajwain, pomegranate seeds) on a medium flame for 2–3 minutes until aromatic. Don’t burn them.

Let them cool completely.

Grind the roasted spices in a spice grinder or blender to a fine powder.

Add the dry ginger powder, amchur, turmeric, hing, and nutmeg to the ground mixture and mix well.

Store in an airtight jar away from moisture and direct sunlight. Stays fresh for up to 2 months.
