Homemade Garam Masala
Ingredients:
2 tbsp coriander seeds
1 tbsp cumin seeds
1 tbsp black peppercorns
1 tbsp cardamom pods (green)
1 tsp cloves
1 small cinnamon stick (or 1 tsp ground cinnamon)
1 tsp fennel seeds (optional)
1/2 tsp ground nutmeg (or a small piece of whole nutmeg)
2 bay leaves
1-2 dried red chilies (optional, for a spicier blend)

Toast the spices:
In a dry skillet over medium heat, toast all the whole spices (everything except the nutmeg and ground cinnamon, if using) for 2–3 minutes. Stir constantly until fragrant — don’t let them burn.
Cool down:
Transfer toasted spices to a plate and let them cool completely.
Grind:
Using a spice grinder, coffee grinder, or mortar and pestle, grind the cooled spices into a fine powder. Add ground nutmeg and cinnamon at this stage if you didn't use whole versions.
