Ingredients
1 cup mixed dried fruits (raisins, sultanas, chopped dates, cherries, etc.)
1/2 cup orange juice (or water)
1/2 cup sugar
1/2 cup vegetable oil or melted butter
2 eggs
1 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp nutmeg
1 tsp vanilla extract
Pinch of salt
Instructions
Soak the dried fruits in orange juice for at least 30 minutes (or overnight for more flavor). You can warm it slightly to speed up soaking.
Preheat your oven to 160°C (320°F). Grease and line a loaf pan or round cake tin.
In a bowl, whisk together sugar, oil (or butter), eggs, and vanilla extract.
Add the soaked fruits along with the juice. Mix well.
In another bowl, sift together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
Gradually fold the dry ingredients into the wet mixture until just combined. Don’t overmix.
Pour the batter into the prepared pan and bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
Let it cool before slicing. It gets even better the next day!

Instructions
1.Mix milk and vinegar in a cup to make buttermilk.
2.In a basin put Flour, Cocoa powder, baking soda, baking powder, sugar & salt and mix them together.
3.Add the egg ,butter,vanilla, buttermilk &Warm water .
4.Fold (mix) the ingredients gently with a spatula or a whisk until well combined. Don't overmix
5.Put the mixture into a greased 8 inch baking tin ,lined with a parchment paper at the bottom.
6.Bake in a preheated oven for 40-45 mins at 170 degrees Celsius

📝 Ingredients:
Wet Mix:
- Yogurt – ½ cup
- Sugar – ½ cup
- Oil – ¼ cup
- Vanilla essence – 1 tsp
- Mix well
- Dry Mix:
- All-purpose flour – 1 cup
- Baking powder – 1 tsp
- Baking soda – ½ tsp
- Milk – ¼ cup
- Mix into the wet mix
- Add-ins:
- Fresh grated coconut – ¼ cup
- Fold into the batter

1. Grease a 6-inch cake pan.
2. Pour in the batter and top with nuts & coconut.
3. Stovetop method:
- Preheat a heavy-bottomed pan for 5 mins on medium flame.
- Place cake pan inside, cover with lid.
- Cook on medium flame for 30–40 mins.
4. Oven method (optional):
- Preheat oven to 170°C.
- Bake for 30–40 mins.
