VIRAL Dubai Chocolate Brownies
Brownie Ingredients:
- 1¼ cups (200g) semi-sweet chocolate chips  
- 1/2 cup (115g) unsalted butter  
- 1 cup (200g) light brown sugar  
- Pinch of salt  
- 2 large eggs  
- 2 tsp vanilla bean paste (optional)  
- 4 tbsp unsweetened cocoa powder  
- 1/2 cup (65g) all-purpose flour  

Instructions:
1. Preheat oven to 350°F (180°C). Line an 8-inch square pan with parchment, leaving some overhang.

2. Melt chocolate chips and butter together (microwave in 30-second bursts or use a double boiler). Stir until smooth and let cool slightly.

3. In a large bowl, whisk sugar, salt, eggs, and vanilla until sugar dissolves.

4. Fold in the melted chocolate mixture.

5. Sift in cocoa powder and flour. Stir until smooth and glossy.

6. Pour batter into the pan, level it out, and bake for 25–28 minutes. Edges should be set; center should have moist crumbs.

7. Let brownies cool slightly in the pan.

🌿 Pistachio Ingredients:
- 1 cup (300g) pistachio cream  
- 2 tbsp tahini  
- Large pinch of salt  
- 2 cups (160g) roasted kataifi

Instructions:
1. Mix pistachio cream, tahini, and salt in a bowl.

2. Fold in roasted kataifi until fully coated.

3. Spread this mixture over the cooled brownies. Use an offset spatula to level.

🍫 Ganache Topping:
- 2 cups (340g) semi-sweet chocolate chips  
- 1/2 cup (125ml) heavy cream  
- 2 tbsp pistachio cream  

Instructions:
1. Heat cream in a saucepan until small bubbles form (don’t boil).

2. Pour hot cream over chocolate chips. Let sit for 2 minutes, then stir until smooth.

3. Spread ganache over the pistachio layer and level it out.

4. Sprinkle pistachios on top.

How to Toast Kataifi

1. Break raw kataifi pastry into small strands.

2. Melt unsalted butter in a skillet over medium-low heat.

3. Add kataifi and stir often until golden brown.

4. Let cool before using in the pistachio layer.
