ഒരു വെറ്ററിനറി ഡോക്ടർ എന്ന നിലയിൽ കൃത്യമായ വിവരങ്ങളെ അടിസ്ഥാനപ്പെടുത്തിയുള്ള രോഗനിർണ്ണയമില്ലാതെ സോഷ്യൽ മീഡിയയിലൂടെ മരുന്നും ഡോസും ചികിത്സയും നിർദ്ദേശിക്കുന്നത് ചെയ്യാറില്ല. ഒരേ ലക്ഷണത്തിന് പല രോഗങ്ങളാകാം കാരണം. ഇനം, പ്രായം, ശരീരഭാരം, രോഗാവസ്ഥ, മറ്റ് മരുന്നുകൾ, കരൾ-വൃക്ക പ്രവർത്തനം തുടങ്ങിയവ പരിഗണിച്ചാണ് മരുന്നും ഡോസും തീരുമാനിക്കേണ്ടത്. ഭക്ഷ്യോൽപ്പാദന മൃഗങ്ങളാണെങ്കിൽ withdrawal period കൂടി നിർബന്ധമായും പരിഗണിക്കണം.

വിരിയിക്കാനുള്ള മുട്ട

🥚 വിരിയിക്കാനുള്ള മുട്ട ശേഖരണവും പരിപാലനവും (Hatching Egg Collection & Care)
നല്ല വിരിയൽ ശേഷിയും ആരോഗ്യകരമായ കോഴിക്കുഞ്ഞുങ്ങളെയും ലഭിക്കുന്നതിന്, വിരിയിക്കാനുള്ള മുട്ടകൾ ശേഖരിക്കുന്നതിലും പരിപാലിക്കുന്നതിലും പ്രത്യേക ശ്രദ്ധ നൽകേണ്ടതുണ്ട്.

1. മുട്ട ശേഖരിക്കുമ്പോൾ ശ്രദ്ധിക്കേണ്ട കാര്യങ്ങൾ

 * കൂടുകൾ സജ്ജമാക്കൽ (Nest Boxes):

   * കൂടുകളിൽ വൃത്തിയുള്ള ഉണങ്ങിയ വൈക്കോൽ, അറക്കപ്പൊടി, അല്ലെങ്കിൽ മറ്റ് അനുയോജ്യമായ വസ്തുക്കൾ വിതറണം.

   * കൂടുകൾ വൃത്തിയായി സൂക്ഷിക്കുന്നത് മുട്ടയിൽ അഴുക്ക് പറ്റുന്നത് ഒഴിവാക്കാൻ സഹായിക്കും.

 * ശേഖരണ സമയം (Collection Time):

   * മുട്ടകൾ കൂടുമ്പോൾ തന്നെ ശേഖരിക്കുന്നത് പ്രധാനമാണ്. ചൂടുള്ള കാലാവസ്ഥയിൽ, മണിക്കൂർ ഇടവിട്ട് മുട്ടകൾ ശേഖരിക്കണം.

 * മുട്ടയുടെ വലുപ്പം (Egg Size):

   * വിരിയിക്കാനായി തിരഞ്ഞെടുക്കുന്ന മുട്ടകൾക്ക് നിശ്ചിത ഭാരം ഉണ്ടായിരിക്കണം. സാധാരണയായി 48-50 ഗ്രാം അല്ലെങ്കിൽ 52-60 ഗ്രാം ഭാരമുള്ള മുട്ടകളാണ് മികച്ചത്.

   * വളരെ ചെറുതോ, വലുതോ ആയ മുട്ടകൾ വിരിയൽ നിരക്ക് കുറയ്ക്കാൻ സാധ്യതയുണ്ട്.

 * മുട്ടയുടെ ഗുണമേന്മ (Egg Quality):

   * വൃത്തിയുള്ള മുട്ടകൾ: അഴുക്ക്, കാഷ്ഠം, രക്തം എന്നിവ പുരളാത്ത വൃത്തിയുള്ള മുട്ടകൾ മാത്രം വിരിയിക്കാനായി തിരഞ്ഞെടുക്കുക.

   * ഒഴിവാക്കേണ്ടവ: നീളമുള്ളതോ, ഉരുണ്ടതോ, വളരെ കട്ടിയുള്ളതോ, വളരെ നേർത്തതോ ആയ തോടുള്ള മുട്ടകൾ ഒഴിവാക്കണം.

 * വൃത്തിയാക്കൽ (Cleaning):

   * വൃത്തി കുറഞ്ഞ മുട്ടകൾ വെള്ളം ഉപയോഗിച്ച് കഴുകുന്നത് ഒഴിവാക്കണം. കഴുകിയാൽ മുട്ടയുടെ തോടിലെ സംരക്ഷണപാളി (Cuticle) നഷ്ടപ്പെടുകയും അണുക്കൾ അകത്ത് കടക്കാൻ സാധ്യതയുണ്ടാവുകയും ചെയ്യും.

   * വളരെ ചെറിയ അഴുക്കുകൾ ഉണ്ടെങ്കിൽ, ഉണങ്ങിയ തുണി അല്ലെങ്കിൽ മണൽ കടലാസ് (Sand Paper) ഉപയോഗിച്ച് ശ്രദ്ധയോടെ നീക്കം ചെയ്യാം.

2. സംഭരണം (Storage)

വിരിയിക്കാനുള്ള മുട്ടകൾ ശേഖരിച്ച ശേഷം ഉടൻ തന്നെ ശരിയായ രീതിയിൽ സംഭരിക്കണം:

 * താപനില (Temperature): മുട്ടകൾ 15°C മുതൽ 18°C വരെ താപനിലയിൽ സൂക്ഷിക്കുന്നതാണ് ഏറ്റവും ഉചിതം. ഈ താപനിലയിൽ ഭ്രൂണത്തിന്റെ വളർച്ച താത്കാലികമായി നിലനിൽക്കുകയും മുട്ടയുടെ ഗുണമേന്മ നിലനിർത്താൻ കഴിയുകയും ചെയ്യും.

 * ഈർപ്പം (Humidity): 75% മുതൽ 85% വരെ ഈർപ്പം നിലനിർത്തുന്നത് മുട്ടകൾ ഉണങ്ങിപ്പോകാതിരിക്കാൻ സഹായിക്കും.

 * സംഭരണ രീതി:

   * മുട്ടകൾ മൂർച്ച കുറഞ്ഞ ഭാഗം താഴെയായി വെർട്ടിക്കൽ ട്രേകളിൽ സൂക്ഷിക്കണം.

   * 7 ദിവസത്തിൽ കൂടുതൽ സംഭരിക്കുന്നത് വിരിയൽ നിരക്ക് കുറയ്ക്കും. അതിനാൽ ഒരാഴ്ചക്കുള്ളിൽ തന്നെ വിരിയിക്കാനായി വെക്കാൻ ശ്രമിക്കുക.

 * തിരിക്കൽ (Turning): ഒരാഴ്ചയിൽ കൂടുതൽ സംഭരിക്കേണ്ടി വന്നാൽ, മുട്ടകൾ ദിവസത്തിൽ ഒരു തവണയെങ്കിലും 45 ഡിഗ്രി ചെരിച്ച് വെക്കണം. ഇത് മഞ്ഞക്കരു തോടുമായി ഒട്ടിപ്പിടിക്കുന്നത് തടയാൻ സഹായിക്കും.

3. ഇണചേരൽ അനുപാതം (Mating Ratio)
വിരിയിക്കാനുള്ള മുട്ടകൾ ഉത്പാദിപ്പിക്കുമ്പോൾ, 

പൂവൻ കോഴികളുടെ എണ്ണം ഉറപ്പാക്കണം:

 * അനുപാതം: സാധാരണയായി 8-10 പിടക്കോഴികൾക്ക് ഒരു പൂവൻ കോഴി എന്ന നിലയിൽ വേണം ഫാമുകളിൽ പരിപാലിക്കാൻ (ഇനം അനുസരിച്ച് ഇതിൽ മാറ്റങ്ങൾ വരാം).

 * ഈ അനുപാതം ശരിയായി നിലനിർത്തുന്നത് മുട്ടകൾക്ക് നല്ല ബീജസങ്കലനം (Fertility) ഉറപ്പാക്കാൻ സഹായിക്കും.

നിഹാരി'. 'നിഹാർ

ചില വിഭവങ്ങളുണ്ട്, അത് കഴിക്കുന്നതിനേക്കാൾ അനുഭവിക്കുകയാണ് വേണ്ടത്. മണിക്കൂറുകളോളം ചെറിയ തീയിൽ വെന്തുവരുന്ന ഇറച്ചിയും, അതിന്റെ കൊഴുപ്പിൽ കുറുകിയ ചാറും... അതാണ് ഉത്തർപ്രദേശിലെ, പ്രത്യേകിച്ച് ലക്നൗ, ഡൽഹി എന്നിവിടങ്ങളിലെ ഒരു ഇതിഹാസമായ 'നിഹാരി'. സവാള - 2 (നീളത്തിൽ അരിഞ്ഞത്)
ഇഞ്ചി-വെളുത്തുള്ളി പേസ്റ്റ് - 2 ടേബിൾസ്പൂൺ
തൈര് - ½ കപ്പ്
മഞ്ഞൾപ്പൊടി - 1 ടീസ്പൂൺ
കാശ്മീരി മുളകുപൊടി - 2 ടേബിൾസ്പൂൺ
മല്ലിപ്പൊടി - 1 ടേബിൾസ്പൂൺ
ഗോതമ്പുപൊടി (Atta) - 3 ടേബിൾസ്പൂൺ (വെള്ളത്തിൽ കലക്കിയത്)
ഉപ്പ് - ആവശ്യത്തിന്
നിഹാരി മസാല (പൊടിക്കാൻ):

പെരുംജീരകം - 2 ടേബിൾസ്പൂൺ
ഏലക്ക - 5
ഗ്രാമ്പൂ - 6
കറുവപ്പട്ട - 1 ഇഞ്ച് കഷ്ണം
ബേ ലീഫ് - 1
കറുത്ത ഏലക്ക - 2
ജാതിപത്രി (Mace) - 1
സ്റ്റാർ അനൈസ് - 1
കുരുമുളക് - 1 ടീസ്പൂൺ
ചുക്ക് പൊടിച്ചത് (Dry ginger powder) - 1 ടീസ്പൂൺ
അലങ്കരിക്കാൻ (Garnish):

ഇഞ്ചി (നീളത്തിൽ കനം കുറച്ച് അരിഞ്ഞത്)
പച്ചമുളക് (അരിഞ്ഞത്)
മല്ലിയില (അരിഞ്ഞത്)
നാരങ്ങ
🥣 തയ്യാറാക്കുന്ന വിധം:

നിഹാരി മസാലയ്ക്കുള്ള ചേരുവകൾ (ചുക്ക് പൊടി ഒഴികെ) ഒരു പാനിലിട്ട് വറുത്ത്, തണുത്ത ശേഷം നന്നായി പൊടിച്ചെടുക്കുക. ഇതിലേക്ക് ചുക്ക് പൊടിയും ചേർത്ത് മാറ്റിവെക്കുക.
ഒരു വലിയ പ്രഷർ കുക്കറിൽ എണ്ണ/നെയ്യ് ചൂടാക്കി സവാള ചേർത്ത് ഇളം സ്വർണ്ണനിറമാകുന്നതുവരെ വഴറ്റുക.
ഇതിലേക്ക് ഇഞ്ചി-വെളുത്തുള്ളി പേസ്റ്റ് ചേർത്ത് പച്ചമണം മാറുന്നത് വരെ വഴറ്റുക.
ഇറച്ചി കഷ്ണങ്ങൾ ചേർത്ത് 5-7 മിനിറ്റ് ഉയർന്ന തീയിൽ നിറം മാറുന്നത് വരെ വഴറ്റുക.
ഇനി തീ കുറച്ച്, തൈര്, മഞ്ഞൾപ്പൊടി, മുളകുപൊടി, മല്ലിപ്പൊടി, ഉപ്പ്, തയ്യാറാക്കിവെച്ച നിഹാരി മസാലയുടെ പകുതി എന്നിവ ചേർത്ത് നന്നായി ഇളക്കുക.
മസാലയുടെ പച്ചമണം മാറി എണ്ണ തെളിഞ്ഞു വരുമ്പോൾ, ഇറച്ചി മുങ്ങിക്കിടക്കാൻ പാകത്തിന് ചൂടുവെള്ളം ഒഴിക്കുക.
കുക്കർ അടച്ച്, ഒരു വിസിൽ വന്നതിന് ശേഷം തീ ഏറ്റവും കുറച്ച് വെച്ച് 1.5 - 2 മണിക്കൂർ വേവിക്കുക. (ഇറച്ചി എല്ലിൽ നിന്ന് വിട്ടു വരുന്ന പരുവമാകണം).
പ്രഷർ പോയ ശേഷം കുക്കർ തുറക്കുക. ഗ്രേവിയുടെ മുകളിൽ തെളിഞ്ഞുവന്ന എണ്ണ (തരി) ഒരു പാത്രത്തിലേക്ക് കോരി മാറ്റിവെക്കുക.
ഒരു ബൗളിൽ ഗോതമ്പുപൊടി അല്പം വെള്ളം ചേർത്ത് കട്ടയില്ലാതെ കലക്കി, ഇത് പതിയെ തിളച്ചുകൊണ്ടിരിക്കുന്ന കറിയിലേക്ക് ഒഴിച്ച് പെട്ടെന്ന് ഇളക്കുക. ഗ്രേവി കുറുകി വരാനാണിത്.
ബാക്കിയുള്ള നിഹാരി മസാലയും ചേർത്ത്, 10-15 മിനിറ്റ് കൂടി ചെറിയ തീയിൽ തിളപ്പിക്കുക.
വിളമ്പുന്ന പാത്രത്തിലേക്ക് നിഹാരി പകർന്ന്, അതിനു മുകളിലായി നേരത്തെ കോരി മാറ്റിയ എണ്ണ (തരി) ഒഴിക്കുക.
അരിഞ്ഞുവെച്ച ഇഞ്ചി, പച്ചമുളക്, മല്ലിയില എന്നിവ വിതറി, ഒരു കഷ്ണം നാരങ്ങ വെച്ച് ചൂടോടെ കുൽച്ച, നാൻ അല്ലെങ്കിൽ റൊട്ടിയുടെ കൂടെ വിളമ്പാം.

Classic Fruit Cake

1. Classic Fruit Cake

Ingredients
 • 1 ½ cups mixed dried fruits (raisins, currants, chopped dates)
 • 1 ½ cups flour
 • ¾ cup brown sugar

tea varieties

1️⃣ Classic Sweet Tea
Ingredients
8 cups water
4 black tea bags
1 cup sugar (adjust to taste)
Ice
Lemon slices

Instructions

🥘 Dish 2: Chole Bhature

- 1 tbsp chole masala
- 2 cups maida (all-purpose flour)

- 1/2 tsp baking soda
- oil for deep frying
- green chilies
- ginger juliennes

Method:
Soak chickpeas overnight and pressure cook them with tea bags for that deep dark color. For the bhature, knead maida with yogurt and baking soda, then let the dough rest for a few hours. Sauté onion paste and chole masala in a pan, add the cooked chickpeas, and simmer until thick. Roll out the dough and deep fry until they puff up into golden balloons. Garnish the chole with fresh chilies and ginger juliennes.

🥘 Dish 3: Sarson Ka Saag

Ingredients:
- 500g mustard leaves
- 250g spinach leaves
- 1/2 cup bathua leaves
- 2 tbsp makki ka atta (maize flour)
- 1 inch ginger
- 4 cloves garlic
- 2 green chilies
- 2 tbsp white butter (makkhan)
- salt (to taste)
- 1 tsp red chili powder

Method:
Thoroughly wash and chop all the greens. Boil them with ginger, garlic, and green chilies until soft. Blend the mixture coarsely or mash it traditionally. Return the greens to the heat and stir in the maize flour to thicken the saag. Season with salt and red chili powder. Serve it piping hot topped with a generous dollop of fresh white butter! ✅COURTSHIP AND MATING IN THE SAVANNA 

Across the grasslands and dry savannas of Africa, helmeted guineafowl begin reproduction with distinct courtship behavior. The male displays by calling loudly and spreading his wings, as shown in the image, to attract a female. Once a pair forms, mating occurs on the ground in open areas with tall vegetation that offers some cover from predators. This timing coincides with the breeding season, when food is more abundant and conditions favor raising young.

✅EGG DEVELOPMENT AND NESTING 

After mating, the female develops eggs internally before laying them. The diagram shows eggs moving through the oviduct, with the embryo and yolk sac forming inside the shell. A female typically lays a large clutch of 6-12 eggs in a shallow scrape on the ground, hidden among grasses and low vegetation. The nest is well concealed to reduce detection by snakes, raptors, and mammalian predators. Incubation lasts about 26-28 days, during which the female keeps the eggs warm and hidden.

✅HATCHING AND EARLY CHICKENS SURVIVAL 

Guineafowl chicks are precocial, meaning they can walk and follow the adults almost immediately after hatching. This early mobility is critical in savanna environments where staying still makes them vulnerable.

​1. കൃഷിക്ക് അനുയോജ്യമായ സമയം (Time of Planting)
​കേരളത്തിൽ ചേന നടാൻ ഏറ്റവും അനുയോജ്യമായ സമയം കുംഭമാസം (ഫെബ്രുവരി - മാർച്ച്) ആണ്. മഴ തുടങ്ങുന്നതിന് മുൻപ് നട്ടാൽ വിത്ത് മണ്ണിൽ കിടന്നു പാകപ്പെടുകയും പുതുമഴയോടെ മുളയ്ക്കുകയും ചെയ്യും.

​
2. വിത്ത് തിരഞ്ഞെടുക്കലും തയ്യാറാക്കലും (Seed Preparation)
​നല്ല വിളവ് ലഭിച്ച, രോഗബാധയില്ലാത്ത ചേന വേണം വിത്തിനായി തിരഞ്ഞെടുക്കാൻ.
​ഒരു കിലോയോളം വലിപ്പമുള്ള കഷ്ണങ്ങളായി ചേന മുറിക്കുക. ഓരോ കഷ്ണത്തിലും മുകളിലായി ഒരു മുളപ്പ് (Bud) ഉണ്ടെന്ന് ഉറപ്പുവരുത്തുക.
​ഇങ്ങനെ മുറിച്ച വിത്തുകൾ ചാണകപ്പാലിൽ മുക്കി തണലത്തു ഉണക്കിയെടുക്കുക. (കുമിൾ രോഗങ്ങൾ വരാതിരിക്കാൻ ചാണകപ്പാലിൽ ട്രൈക്കോഡെർമ ചേർക്കുന്നത് വളരെ നല്ലതാണ്).


​3. നിലമൊരുക്കലും നടീലും (Land Preparation & Planting)
​നല്ല വെയിൽ ലഭിക്കുന്നതും നീർവാർച്ചയുള്ളതുമായ സ്ഥലം തിരഞ്ഞെടുക്കുക.
​കുഴിയുടെ വലിപ്പം: 60 x 60 x 45 സെന്റീമീറ്റർ (നീളം x വീതി x ആഴം) വലിപ്പത്തിൽ കുഴികൾ എടുക്കുക.
​അകലം: കുഴികൾ തമ്മിൽ 90 സെന്റീമീറ്റർ അകലം ഉണ്ടായിരിക്കണം.
​കുഴിയിൽ ഉണക്കിപ്പൊടിച്ച ചാണകമോ കമ്പോസ്റ്റോ മേൽമണ്ണുമായി ചേർത്ത് നിറയ്ക്കുക.
​വിത്ത് (ചേനക്കഷ്ണം) കുഴിയുടെ മധ്യഭാഗത്തായി വെച്ച് മുകളിൽ മണ്ണിടുക.

​ആദ്യഘട്ടം (നട്ട് 45-ാം ദിവസം): ചേന മുളച്ച് ഇല വിരിയുന്ന സമയമാണിത്. കളകൾ നീക്കം ചെയ്ത ശേഷം കുറച്ച് യൂറിയ, രാജ്ഫോസ്, പൊട്ടാഷ് എന്നിവയോ അല്ലെങ്കിൽ ജൈവവളങ്ങളായ എല്ലുപൊടി, വേപ്പിൻപിണ്ണാക്ക് എന്നിവയോ നൽകാം.
​രണ്ടാം ഘട്ടം (നട്ട് 90-ാം ദിവസം): ചെടിക്ക് 3 മാസം പ്രായമാകുമ്പോൾ വീണ്ടും വളം നൽകണം. ചേനയ്ക്ക് വലിപ്പം വയ്ക്കാൻ ചാരം (Ash) ചേർക്കുന്നത് വളരെ നല്ലതാണ്. വളം ഇട്ട ശേഷം മണ്ണ് നന്നായി കൂട്ടിക്കൊടുക്കണം (Earthing up).

5. പരിപാലനം (Aftercare)

​മണ്ണ് കൂട്ടിക്കൊടുക്കൽ: വളം ചെയ്യുന്ന സമയങ്ങളിൽ തടത്തിലേക്ക് മണ്ണ് കയറ്റിക്കൊടുക്കുന്നത് കിഴങ്ങ് വലുതാകാൻ സഹായിക്കും.

6. വിളവെടുപ്പ് (Harvesting)
​സാധാരണയായി നട്ട് 8 മുതൽ 9 മാസത്തിനുള്ളിൽ ചേന വിളവെടുക്കാൻ പാകമാകും.
​ചേനയുടെ തണ്ടുകൾ മഞ്ഞളിച്ച് ഉണങ്ങി വീഴുന്നതാണ് വിളവെടുപ്പിന്റെ ലക്ഷണം.
​തണ്ട് പൂർണ്ണമായും ഉണങ്ങിയ ശേഷം കിഴങ്ങ് ശ്രദ്ധാപൂർവ്വം മണ്ണിൽ നിന്നും ഇളക്കിയെടുക്കാം.

ഇനി രണ്ടാഴ്ച കഴിഞ്ഞാൽ കുംഭമാസത്തിലെ പൗർണമി.. ഇന്നേക്ക് ദുർഗ്ഗാഷ്ടമി എന്ന് നകുലന്റെ ഗംഗ പറഞ്ഞത് പോലെ. ചേനയെ വെട്ടി കണ്ടം തുണ്ടമാക്കി മണ്ണിൽ അടക്കം ചെയ്യേണ്ട സമയം.

മലയാളിയുടെ തീന്മേശകളെ ഒരു കാലത്ത് സമ്പന്നമാക്കിയ കിഴങ്ങു വർഗ്ഗങ്ങൾ, കേരളം 'ഡയബറ്റിക് തലസ്ഥാനം' ആയതോടെ അരങ്ങൊഴിഞ്ഞ മട്ടാണ്. കിഴങ്ങ് വർഗ്ഗങ്ങൾ മിതമായി കഴിക്കുന്നത് നമ്മുടെ "Gut health" നെ സമ്പുഷ്ടമാക്കും. ഇത് ഭക്ഷണത്തിൽ ദിവസവും മിതമായി ഉൾപ്പെടുത്തണം.

ഉരുളക്കിഴങ്ങ് ഒഴികെയുള്ള, മണ്ണിന്റെ മണമുള്ള കീഴങ്ങ് വർഗ്ഗങ്ങൾ ഒരു കീഴാള ഭക്ഷണമായി പോലും ഒരു കാലത്തു കണ്ടിരുന്നു. ആഫ്രിക്കയിലെയും ഏഷ്യയിലെയും ജനങ്ങൾ ആണല്ലോ ഇവ കൂടുതലും ഒരു മുഖ്യഭക്ഷണമായി കഴിച്ചിരുന്നത്. എന്നാൽ കിഴങ്ങ് വർഗ്ഗമായ ഉരുളക്കിഴങ്ങിനു ലേറ്റ് ബ്ലൈറ്റ് (Late Blight) എന്ന കുമിൾ രോഗം വന്നു മുച്ചൂടും നശിച്ചപ്പോൾ മരിച്ചത് വെള്ളക്കാരായ ഐറിഷ്കാർ ആയിരുന്നു എന്നത് ഒരു വിരോധാഭാസവും.

എന്തായാലും 'ചേന വയ്ക്കാത്തവനെ അടിയ്ക്കണം' എന്ന് പണ്ടാരാണ്ട്‌ പറഞ്ഞിട്ടുണ്ട്. മറ്റൊന്നും കൊണ്ടല്ല, ഈ വിളയ്ക്ക് ബല്യ റിസ്ക് ഇല്ല, ഭേദപ്പെട്ട വിളവ് ഉറപ്പാണ്, മഴയെ ആശ്രയിച്ച് വിളവിറക്കാം, രോഗകീടങ്ങളും കമ്മി.

ഭക്ഷണത്തിലെ 'ദേവൻ' (സുരൻ)
എന്നും കഴിക്കേണ്ട ഭക്ഷണമാണ് ചേന, രമണാ... സുരൻ എന്നാണ് ചേനയുടെ സംസ്കൃതം. സുരൻ എന്നാൽ ദേവൻ. ഭക്ഷണത്തിലെ ദേവനാണ് ചേനസാർ...

ഈസ്ട്രജന്റെ നിറകുടമായതിനാൽ ഇവൻ പെമ്പിളൈ അരുമൈ.. ഓല് ഇത് ദിവസവും കഴിക്കണം. പ്രീ മെൻസ്‌ട്രുൽ സിൻഡ്രം ശമിപ്പിക്കാൻ ഇവനോളം വിരുതനാര്? മേനോപ്പാസ് അസ്കിതകളും കുറയ്ക്കും.

കുംഭത്തിൽ നട്ടാൽ കുടത്തോളം, മീനത്തിൽ നട്ടാൽ മീൻ കണ്ണോളം' എന്നാണല്ലോ ചൊല്ല്. കാലം നോക്കി കൃഷി, മേളം നോക്കി ചാട്ടം എന്നാണല്ലോ മ്മടെ വേടൻ മൊഴിഞ്ഞത്.

രണ്ടടി വ്യാസത്തിൽ, മുക്കാലടി - ഒരടി ആഴത്തിൽ കുഴിയെടുത്ത് 100 ഗ്രാം കുമ്മായം ചേർത്ത് മണ്ണറഞ്ഞു രണ്ടാഴ്ച ഇടണം.
ആ സമയം പുട്ട് പൊടിയുടെ നനവ് മണ്ണിൽ വേണം. നനവ് പോകാതിരിക്കാൻ കരിയിലകൾ കൊണ്ട് തടം മൂടിയിടാം.
ആ സമയം ചേന പൂളുകളാക്കി ചാണകപ്പാലിലും സ്യൂഡോമോണാസിലും മുക്കി സൂക്ഷിക്കുകയും ആകാം.
ചേന നടുമ്പോൾ രണ്ട് കിലോ ചാണകപ്പൊടിയും ഒരിച്ചിരി എല്ലു പൊടിയും ഒരിച്ചിരി വേപ്പിൻ പിണ്ണാക്കും തൂവി തടം പകുതി മൂടുക.
ചേന പൂള് വച്ച് മണ്ണ് അല്പം ഇട്ട് കട്ടയ്ക്ക് കരിയിലകൾ ഇട്ട് ഒരു കൂമ്പൽ ഉണ്ടാക്കി വയ്ച്ചാൽ പിന്നെ ചേനയായി, ചേനയുടെ പാടായി.
കുംഭമാസത്തിലെ വെളുത്തവാവിന് നട്ടുകഴിഞ്ഞാൽ പിന്നെ തല വെളിയിൽ കാണുന്നത് ജൂൺ മാസം കഴിയുമ്പോൾ ആകും. പിന്നെ കൊടിയേറ്റം, കുടമാറ്റം. കക്ഷി മണ്ണിനടിയിൽ വെറുതെ ഇരിക്കുകയായിരുന്നില്ല ഉത്തമാ... മണ്ണിൽ അസ്ഥിവാരം പണിയുകയായിരുന്നു.

മുള പൊന്തിക്കഴിഞ്ഞാൽ അല്പം NPK വളമോ ജൈവ വളങ്ങളോ ഒക്കെ അവനവന്റെ വീക്ഷണകോണകം അനുസരിച്ചു ചേർത്ത് കൊടുത്ത് ചിക്കി മണ്ണടുപ്പിക്കാം. വീണ്ടും വീണ്ടും കരിയിലകൾ ചേർത്ത് കൊടുക്കാം.

ചുറ്റുമുള്ള മണ്ണ് എത്രത്തോളം ഇളക്കമുള്ളതാകുന്നുവോ അത്രയും കണ്ട് ചേന വികസിച്ചു വലിപ്പം വയ്ക്കും. ചിക്കുമ്പോൾ അല്പം മഗ്നീഷ്യം സൾഫേറ്റും ചേർത്ത് കൊടുത്താൽ നന്ന്. കരിയിലകൾ മണ്ണിൽ അഴുകി ചേരുമ്പോൾ കാർബൺ സങ്കലനം (Carbon sequestration) നടക്കുകയും ചെയ്യും.

ബിടില്ല ഞാൻ... എന്റടുത്താ കളി?.. അത് കൊണ്ട് എല്ലാരും കുംഭമാസത്തിൽ പത്ത് ചേനവയ്ക്കാൻ റെഡിയാവുകയല്ലേ..? അതും ചൊറിയാത്ത ഗജേന്ദ്ര ചേന കിട്ടുമെങ്കിൽ കുറച്ചെണ്ണം...

വാൽകഷ്ണം
ആനച്ചേനകളെക്കാൾ, കുഞ്ഞിച്ചേനകൾക്കാണ് വിപണിയിൽ പ്രിയം. അത് കൊണ്ട് ചേന വിത്തുകളോ (ചേനയുടെ പുറത്ത് നിന്നും മുളയ്ക്കുന്ന ചെറിയ കിഴങ്ങുകൾ ) ചെറിയ പൂളുകളോ അകലം കുറച്ച് നട്ട് പരിപാലിച്ചാൽ നല്ല കരുപ്പട്ടി പോലെയുള്ള ഉണ്ണിച്ചേനകൾ വിളവെടുക്കാം.

അങ്ങനെയെങ്കിൽ രണ്ട് വരികൾ തമ്മിൽ ഒന്നര അടിയും വരിയിലെ ചേനകൾ തമ്മിൽ ഒരടിയും അകലം നൽകാം. സാധാരണ ചേനകൾ തമ്മിൽ മൂന്നടി അകലമാണ് ശുപാർശ. അങ്ങനെ എങ്കിൽ ഒരു സെന്റിൽ 49 ചേനകൾ നടാം. ഇന്നത്തെ വിപണി വില അനുസരിച്ചാണെങ്കിൽ ഒരു സെന്റിലെ ചേന വിത്തിനു മാത്രം 2500-3000 രൂപയാകും.

ആരോഗ്യത്തിന് ഏറെ ഗുണകരമായ പഴമാണ് മുന്തിരി. എന്നാൽ, വിപണിയിൽ ലഭിക്കുന്ന മുന്തിരികളിൽ കീടനാശിനികളുടെയും രാസവസ്തുക്കളുടെയും സാന്നിധ്യം ഉണ്ടാകാൻ സാധ്യതയുണ്ട്. അതിനാൽ, കുട്ടികൾക്കും മുതിർന്നവർക്കും നൽകുന്നതിന് മുമ്പ് മുന്തിരി ശരിയായ രീതിയിൽ വൃത്തിയാക്കേണ്ടത് അത്യാവശ്യമാണ്.

മുന്തിരിയിലെ കീടനാശിനികൾ നീക്കം ചെയ്യാൻ സഹായിക്കുന്ന ശാസ്ത്രീയവും ലളിതവുമായ 4 ഘട്ടങ്ങൾ താഴെ പറയുന്നവയാണ്:

ഏതൊരു ലായനി ഉപയോഗിക്കുന്നതിന് മുമ്പും മുന്തിരി പൈപ്പിലെ ഒഴുകുന്ന വെള്ളത്തിൽ കഴുകുക. ഒരു പാത്രത്തിലോ അരിപ്പയിലോ (Colander) മുന്തിരി വെച്ച് 20-30 സെക്കൻഡ് നേരത്തേക്ക് തണുത്ത വെള്ളത്തിൽ കൈകൊണ്ട് പതുക്കെ ഉരച്ച് കഴുകുക. ഇത് മുന്തിരിയുടെ പുറമെയുള്ള പൊടിയും അഴുക്കും പ്രാഥമികമായ രാസാവശിഷ്ടങ്ങളും നീക്കം ചെയ്യാൻ സഹായിക്കും.

ഘട്ടം 2: ബേക്കിംഗ് സോഡ ലായനി (Baking Soda) 🥣
മുന്തിരി വൃത്തിയാക്കാൻ ഏറ്റവും ഫലപ്രദവും ശാസ്ത്രീയമായി അംഗീകരിച്ചതുമായ വഴിയാണിത്. ബേക്കിംഗ് സോഡയ്ക്ക് (Sodium bicarbonate) പലതരം കീടനാശിനി തന്മാത്രകളെ വിഘടിപ്പിക്കാനുള്ള ശേഷിയുണ്ടെന്ന് പഠനങ്ങൾ തെളിയിക്കുന്നു.

ചെയ്യേണ്ട രീതി: ഒരു ലിറ്റർ വെള്ളത്തിൽ ഒരു ടീസ്പൂൺ ബേക്കിംഗ് സോഡ ചേർത്ത് നന്നായി ഇളക്കുക. ഈ ലായനിയിൽ മുന്തിരി 10-15 മിനിറ്റ് ഇട്ടു വെക്കുക. അതിനുശേഷം മുന്തിരി പതുക്കെ ഉരച്ച് ശുദ്ധജലത്തിൽ ഒന്നുകൂടി കഴുകുക.

ചെയ്യേണ്ട രീതി: ഒരു ഭാഗം വിനാഗിരിക്ക് മൂന്ന് ഭാഗം വെള്ളം എന്ന കണക്കിൽ ലായനി തയ്യാറാക്കുക. ഇതിൽ മുന്തിരി 5-10 മിനിറ്റ് മുക്കി വെക്കുക. ശേഷം നന്നായി കഴുകുക.
ഘട്ടം 4: ഉപ്പുവെള്ളം (Salt Water) 🧂
ഉപ്പുവെള്ളത്തിൽ മുന്തിരി കുതിർക്കുന്നത് മുന്തിരിയുടെ പുറത്തെ മെഴുക് പാളിയും കീടനാശിനികളും നീക്കം ചെയ്യാൻ സഹായിക്കും.

ചെയ്യേണ്ട രീതി: ഒരു പാത്രം വെള്ളത്തിൽ അല്പം ഉപ്പ് (കടലുപ്പ് ആയാൽ കൂടുതൽ നല്ലത്) ചേർത്ത് 5-10 മിനിറ്റ് മുന്തിരി കുതിർക്കുക. അതിനുശേഷം ശുദ്ധജലത്തിൽ കഴുകി എടുക്കാം.

1 tsp ground coriander
½ tsp paprika
1 tsp salt
½ tsp black pepper
1 tsp baking powder
2 tbsp all-purpose flour or chickpea flour

For Frying
Vegetable or canola oil

Instructions
1. Soak chickpeas (important)
Place dried chickpeas in a bowl and cover with plenty of water. Soak overnight (12–18 hours). Drain well — do NOT cook.
2. Blend mixture
Add soaked chickpeas, onion, garlic, parsley, cilantro, and spices to a food processor. Pulse until coarse and crumbly (not paste).
3. Rest
Transfer to a bowl. Stir in baking powder and flour. Cover and refrigerate 30–60 minutes (helps crispiness).
4. Shape
Scoop about 1½ tablespoons and shape into balls or patties.
5. Fry
Heat oil to 350°F (175°C). Fry in batches for 3–4 minutes, turning until deep golden brown.

Homemade Chhole/Chana Masala Powder
(Makes ~½ cup | Shelf life: 3 months in an airtight jar)
Ingredients
Whole Spices:
- 2 tbsp coriander seeds
- 1 tbsp cumin seeds
- 1 tsp black peppercorns
- 1 tsp dry pomegranate seeds (anardana)(for tanginess)
- 1 tsp black cardamom (badi elaichi) seeds(only the seeds, discard pods)
- 1 tsp cloves
- 1-inch cinnamon stick
- 1 tsp dry mango powder (amchur)(if you skip anardana)
- 1 tsp kasuri methi (dried fenugreek leaves)
- 2-3 dried red chilies (adjust to heat preference)
- 1 tsp black salt (kala namak)(optional, for chaat-like tang)

Ground Spices (pre-powdered):
- 1 tbsp turmeric powder
- 1 tbsp red chili powder

Step-by-Step Method
1. Dry Roast Whole Spices
1. Heat a pan on low flame. Add coriander seeds, cumin, black peppercorns, anardana, black cardamom seeds, cloves, cinnamon, and dried red chilies.
2. Roast for 3-4 minutes until fragrant (no oil needed). Stir constantly to avoid burning.
3. Turn off heat, add kasuri methi, and let the mixture cool completely.

2. Grind to a Fine Powder
1. Transfer the roasted spices to a blender or spice grinder.
2. Add black salt (if using) and blend to a fine powder.
3. Sieve the powder to remove any coarse bits (optional).

3. Mix Pre-Powdered Spices
1. In a bowl, mix the freshly ground spice blend with turmeric powder and red chili powder.
2. Store in an airtight container away from sunlight.

How to Use This Chole Masala
- For 1 cup chickpeas, use 1.5 tsp of this masala during cooking.
- Add ½ tsp amchur while simmering if you skipped anardana.
- For smoky flavor, temper with a pinch of hing (asafoetida) in hot ghee.

1. Mix Milk:
- Combine milk and milk powder in a pot, stir evenly. 
- Heat until it just starts to boil, then turn off the heat. 
- Let it cool until it's warm to the touch.

2. Sterilize Container:
- Boil the container you'll use to store the yogurt to sterilize it.

3. Add Yogurt Starter:
- When the milk is warm, add the yogurt starter and stir until completely dissolved.

4. Ferment:
- Strain the mixture into the sterilized container and cover with plastic wrap. 
   - Option 1: Put it in the oven at 38°C (100°F) for 10 hours.
   - Option 2: Use a rice cooker on the warm or yogurt setting for 8 hours.

5. Chill:
- Refrigerate the yogurt for a thicker, creamier texture. It tastes best after chilling.
