🍌 Ingredients
1. Raw Rice Flour — 200g
2. Ripe Bananas — 3 pieces
3. Jaggery — 200g
4. Grated Coconut — 100g
5. Ghee — 100g
6. Cardamom Powder — 1 teaspoon
7. Sesame Seeds — 2 tablespoons
8. Baking Soda — ½ teaspoon
9. Cashew Nuts — 50g

👩🍳 Method
1. Prepare the Jaggery Syrup
Heat jaggery with 100ml water until melted.
Strain to remove impurities. Let it cool slightly.
2. Mash the Bananas
In a bowl, mash ripe bananas until smooth.
Add the cooled jaggery syrup and mix well.
3. Combine the Batter
Add rice flour, grated coconut, cardamom powder, and baking soda.
Pour in melted ghee gradually, mixing to form a thick, pourable batter.
Fold in chopped cashews and sesame seeds.
4. Rest the Batter
Cover and let it rest for 30 minutes for flavors to deepen.
5. Bake the Muffins
Preheat oven to 180°C (350°F).
Grease a muffin tin with ghee.
Pour the batter into each mold, filling ¾ full.
Bake for 20–25 minutes or until golden brown and a toothpick comes out clean.
6. Finishing Touch
Brush warm muffins with a little melted ghee for glossy caramelized tops.
Cool slightly before serving.
