Ingredients:
2 cups besan (gram flour)
1 cup sugar
¼ tsp ghee (for batter)
Orange food color (a few drops)
Ghee or oil (for frying)
Water (as needed)
Silver leaf (optional, for garnish)
Instructions:
1. Prepare the Batter:
In a bowl, mix besan, orange food color, and a little ghee. Gradually add water to make a smooth, thin batter — similar to pancake consistency.
2. Make Sugar Syrup:
In a pan, add 1 cup sugar and ½ cup water. Heat until it reaches one-string consistency. Keep it warm on low flame.
3. Fry the Boondis:
Heat ghee or oil in a kadhai. Hold a perforated ladle over it and pour some batter on top. Tap gently so small droplets fall into the hot oil. Fry on medium flame until the boondis turn light golden.
4. Soak in Syrup:
Remove the fried boondis and immediately add them to the warm sugar syrup. Mix gently so all boondis are coated well.
5. Form Laddus:
When the mixture slightly cools down and thickens, take small portions in your hands and shape them into round laddus.
6. Garnish & Serve:
Once laddus are set, decorate with edible silver leaf if desired.
